February Cookies


When I decided on 'a year of cookies' there was one cookie I knew I had to try: the famous madeleine cookie made famous by Marcel Proust in The Remembrance of Things Past. I bought a special madeleine cookie baking pan, which was really the only thing that was a bit difficult. Apparently Danes don't bake a lot of Madeleine cookies. But the baking itself was really easy. I loved the taste and the scent the baking left in my home.

The only thing I consider doing differently is to find a silicone baking pan, because no matter how much I buttered the pan before putting in the batter, they needed some help getting out of the pan, which gave them the crumbly texture you see in the pictures.



If you want to try, here's the recipe:

Madeleines
(app. 30)

125 g flour
1 tea spoon baking powder
4 eggs
125 g sugar
Seeds from 1 vanilla pod
lemon zest (1 lemon)
125 g melted butter

+ melted butter for the pan

Sieve flour and baking powder into a bowl.
Whisk eggs, sugar and vanilla. 
Add lemon zest and fold the flour into the egg mixture.
Fold the butter carefully into the batter. 
Leave it in a cold place for 20 minutes. 
Heat the oven to 230 degrees C. 
Butter the pan and fill the moulds 2/3's full. 
Bake for 5 minutes.
Lower the heat to 200 and bake for 5-7 minutes until the cakes are golden.
Let them cool on a wire rack.

  1. Ooooh, I love madeleines. Ages ago, I saw a recipe for madeleines with lavender and I've wanted to make them ever since. Something about the lavender combined with the cookies seems so...Frenchy.
