Well now, it actually seems like I managed to complete something this year - sort of. We have now arrived at this year's last cake: the December cake. What you see above is said cake with a too transparent icing and ivy leaves and berries sprinkles I tried to put on to make it look pretty(!) It's a Christmas spice cake and it turned out well tastewise.
It also looked a little better than the pictures. I promise. And as always I apologize for the electric light pictures. (Good news: I've signed up for photography class next year!) It's what happens when you're the type of person who works best at night.
If you'd like to try it, here's the recipe:
250 g butter
5 eggs
1 vanilla pod
250 g muscovado sugar
250 g flour
15 g powdered cinnamon
10 g powdered cardamom
10 g powdered cloves
icing sugar
Preheat oven: 160 degrees C
Whisk vanilla seeds, muscovado sugar and butter. Add eggs one at a time while whisking.
Mix flour, cinnamon, cardamom and cloves and sieve it into the egg mix. Mix carefully and put the mixture in a spring form pan which has been brushed with oil or butter and put it in the oven for app. 45 minutes. Let it cool and mix icing sugar with a water and decorate the cake with it.
A round-up of this year's cakes to come.....until then... Merry Christmas!
Your Christmas spice cake looks simply delicious. Happy holidays!
